  • 2 teaspoons wholegrain mustard
  • 2 tablespoons olive oil
  • 1/2 small lemon juiced
  • 1/2 small watermelon cubed
  • 1 bunch watercress trimmed
  • 1 small cucumber sliced
  • 1 small red onion thinly sliced
  • 1 cup vegan feta crumbled
  • 1/2 cup mint leaves

Instructions
 

  • Whisk together the agave, mustard, olive oil, and lemon juice.
  • In a mixing bowl, combine the remaining ingredients.
  • Drizzle the dressing over the top and serve immediately.
