Cook the rice according to the package instructions. Once cooked, set it aside.
Heat a tablespoon of vegetable oil in a large skillet or pot over medium heat. Add the vegan meat to the skillet and cook it until browned and crumbled. Remove it from the skillet and set it aside. In the same skillet, add the vegetables and sauté until softened.
Return the cooked vegan meat to the skillet with the vegetables. Sprinkle the Cajun or Creole seasoning over the mixture and stir well to combine. Pour the vegetable broth into the skillet and bring the mixture to a simmer. Add the cooked rice to the skillet and stir everything together until well combined.
