Vegan Dirty Rice

Ingredients
  

  • 1 cup rice long grain
  • 1 tablespoon vegetable oil
  • 1 package vegan meat about 12 ounces
  • 1 large onion diced
  • 1 large bell pepper diced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 2 teaspoons cajun seasoning
  • 1 1/2 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Cook the rice according to the package instructions. Once cooked, set it aside.
  • Heat a tablespoon of vegetable oil in a large skillet or pot over medium heat. Add the vegan meat to the skillet and cook it until browned and crumbled. Remove it from the skillet and set it aside. In the same skillet, add the vegetables and sauté until softened.
  • Return the cooked vegan meat to the skillet with the vegetables. Sprinkle the Cajun or Creole seasoning over the mixture and stir well to combine. Pour the vegetable broth into the skillet and bring the mixture to a simmer. Add the cooked rice to the skillet and stir everything together until well combined.
  • Cover the skillet and let the mixture simmer for about 10 minutes, or until the flavors meld together and the liquid is absorbed. Season with salt and pepper to taste.
  • Serve the dirty rice hot, garnished with chopped green onions or parsley.

Notes

TO STORE: Allow the dish to cool down to room temperature and transfer it to an airtight container or place it in a sealable plastic bag. Store it in the refrigerator for up to 3-4 days.
TO REHEAT: Take the rice out of the refrigerator and transfer it to a microwave-safe dish or a skillet. If using a microwave, cover the dish and heat the rice in 30-second intervals, stirring in between, until it is heated thoroughly. If using a skillet, add a splash of water or vegetable broth to prevent sticking. Use a medium-low heat, stirring occasionally, until it is heated throughout.
