If you remember, a couple of months ago I said I had overdosed on the stuff and the very sight of the green scrotum resembling fruit made me sick. Okay, I actually just made myself vomit a little in my mouth with that previous sentence. Not a good start.

Avocado and Sundried Tomato Pesto Pasta #healthy #raw #simple #vegan #recipe #basil #pestoAnyway… in a bid to get myself reacquainted with the great Avocado, I decided to make an Avocado & Sun-Dried Tomato Pesto. I chucked some Avocado, Sun-Dried Tomato, Garlic, Basil, Cashews and Red Pepper Flakes into the food processor and wished for the best. A couple of minutes later, I was rewarded with a pesto that scarily tasted very much like Bolognese sauce, sans the 3 hours of simmering. Awesome-sauce, literally.

We boil up a boat load of Spaghetti and toss those cheeky little suckers into our awesome sauce. Do the noodle dance whilst you’re at it. Not to forget that if you dont like store bought spaghetti then you can prepare fresh pasta and spaghetti using a pasta maker in your kitchen easily.

    Spaghetti tossed in Avocado Sun-Dried Tomato Pesto. Creamy, simple, yum.

    Ingredients
      

    • 8 oz Spaghetti uncooked
    • 1/4 cup Cashews
    • 1/2 large avocado
    • 1/2 cup basil loosely packed
    • 1/2 cup sun dried tomatoes oil packed, but drained
    • 1 teaspoon Garlic minced
    • 1 teaspoon Red Pepper Flakes
    • 2 tablespoons olive oil
    • 1 tablespoon Water
    • 1 teaspoon Maple Syrup

    Instructions
     

    • Cook Spaghetti according to directions on package.
    • Whilst the Spaghetti is cooking, prepare pesto.
    • Combine all ingredients for the pesto in a food processor and process until almost smooth. Little bits of unprocessed Cashew is fine, as it adds texture to the sauce.
    • Once blended, transfer to large mixing bowl.
    • Drain pasta when done and reserve cooking water. Combine pasta with pesto and toss till noodles are coated well. Add about 1/2 a cup of reserved pasta water and toss, to loosen up the pesto. Serve warm.

        Gotta say, as soon as I read "made me vomit in my mouth", you lost me. Really, really not the kind of mental image I'm looking for when searching for a new recipe. A shame...I'm betting your recipes and blog would be just as effective without being so gross. Sadly, that line alone is making me move on.

        Seriously, this stuff is so the f*ck good it’s almost a shame to eat it. Like, as I am eating it all I can think is “why is this so good?” “This don’t ever have to be this good…” Like, it’s that serious. Its indulgently good on the taste buds. I used 12oz gluten free spaghetti and doubled the amount of sauce. I also used honey instead of maple syrup cause thats what I had. Other than that I made no changes. Super quick and easy to make. This one goes into my personal recipe hall of fame yall. Thank you for this gem Amrita***, you have a new follower and I am vegan so I’ll definitely be trying more of your stuff.

        Hello, I'm doing a Daniel fast, so I was wondering if I could make this without the maple syrup? I can't use any sweeteners (syrups, sugar, honey, etc).
